Hotel Head Chef - Butlin's
The Hotel Head Chef is accountable for efficient and consistent delivery of the menu in accordance with the internal standards and regulations.
The purpose of this role is to ensure the food will delight all of our guests and meet their expectation whilst managing and motivating the team, ensuring kitchen payroll target is achieved and flexed food budget is archived.
The Hotel Head Chef will be overseeing development of the team and lead the teams of chefs within Hotel towards excellence, recognise achievement and provide opportunities to develop their careers.
Salary : 30,000 per annumm
Typical service hours:
Breakfast 8am- 11.30am
Dinner 4pm -8pm
Provide effective leadership to develop and unleash the full potential of the Chefs within hotel.
Create an environment so that our chefs perform at their very best.
Apply a hand on leadership approach in order to develop the core competencies of the chefs.
Create and maintain a great team sprit within the kitchens and food service area.
Promote healthy relationships between the front & back of house teams.
Work closely with the Guest Catering Manager to attract, recruit and retain new chefs to Butlins.
Work closely with the Guest Catering Manager to ensure effective induction to Butlins for all new team seeking a career in our kitchens.
Work with the Guest Catering Manager to implement and maintain a structured training and development program for our kitchen teams within the hotel
Provide feedback to the kitchen team, identifying development and training needs through the performance reviews
Recognise good performance in the workplace and where appropriate reward the performance.
Identify poor performance and plan corrective coaching.
Make recommendations to the Guest Manager so that the kitchen teams have the appropriate resources to deliver the required tasks.
Liaise with the Chef Development Manager to improve food quality, in a consistent way across all food outlets on resort.
Deliver and support Conference and Events Business within Shoreline Conference centre and the Resort.
Benchmark performance and share best practice with the food departments on our resorts in Bognor Regis
Identify areas for improvements within the food service operation through having a good understanding of sales and costs data and make recommendations regarding significant opportunities and risks to the business.
Develop the Chefs knowledge so that they are able to maximise the margin potential through effective use of stock management systems and procedures
Control Food Purchasing & Production levels in line with yearly Food cost Budgets.
Implement and maintain wastage control within kitchen.
Maintain a safe, secure and appealing environment by ensuring compliance to company policy for Health, Safety & Hygiene, as well as all other aspects of relevant legislation.
Adhere to company policy and legislation at all times.
Analyse guest qualitative feedback to measure performance and create action plans with the Chefs to improve performance and guest experience within the venue.
Ensure kitchen teams co-operate with other departments on resort to give the best possible guest experience.
Play an active role within guest catering Leadership Team.
Work with support centre in Hemel Hempstead to ensure aligned goals are fulfilled.
Previous head chef/senior second chef experience within multi-site, high volume food role
Previous experience in training and development
Intermediate food hygiene certificate
Understanding of business P&L and trained in ordering
Self-motivated and organised
