Purpose of the Role
To support the Head Chef in the day-to-day running of the Hotel kitchens and be able to manage kitchen efficiently in their absence, coach and direct whilst ensuring appropriate leadership and support is provided to our teams to deliver agreed high standards of food. The Sous Chef will need to portray high standards of professionalism to inspire and lead the team by example.
Overall scope of the role:
Work to provide a professional level of service, to create inspiring environments and be instrumental in motivating, coaching and developing all the team.
Be responsible for providing a high level of quality food, maintain hygiene standards, ensure all food buffets are garnished and presented to pre-agreed requirements.
Use the correct processes and equipment for specific tasks as agreed with Resort Development Chef/Head Chef
Maintain open lines of communication both between your team and other leaders within the business and be a focus point for team.
Direct team and be a focal point for the kitchen brigade to problem solve
Be open to change and drive processes, embrace changes as agreed with Leaders
Ensure grooming standards for team are maintained
Ensure proper arrangement and garnishing of food
Monitor the quality and quantity of food prepared
Ensure all dishes are prepared according to specification and served at the correct quality, portion size, and temperature
Work towards exceeding guest expectation by encouraging and promoting high level of service
Ensure consistent and smooth running of food production
The ideal candidate should have:-
Have relevant industry qualifications (e.g.Level 3 NVQ or Diploma in Professional Cookery)
Drive and passion for food
Have a problem-solving attitude
Be passionate about delivery and exceeding our guests experience and expectations.
Good interpersonal and communication skills with both guests and team members.
Be a committed team player being flexible, enthusiastic and collaborative.
Demonstrate exceptional service standards and have a good and keen eye for detail.
Be able to find operational solutions for team members when under pressure
